Kufri Jyoti is a popular potato variety developed by the Central Potato Research Institute (CPRI), Shimla, India. It is an early-maturing variety, typically ready for harvest in 80–90 days, making it ideal for regions with short growing seasons.
The tubers are large, oval, with smooth white skin and shallow eyes, and have white, waxy flesh. Kufri Jyoti is primarily grown for table use, but it is also suitable for processing into chips and flakes.
